Taco Pasta Skillet

Ingredients:
8 oz. very lean ground beef
1 package taco seasoning
11oz. of undrained corn
14 oz of undrained black beans
1 cup salsa
3 cups hot water
8 oz. uncooked penne pasta
4 oz. fat free cream cheese
4 oz shredded fat free cheddar cheese
Brown in meat in a large skillet. Drain fat and rinse under hot water to remove additional fat. Add taco seasoning, corn, black beans,salsa, water, and pasta. Bring to a boil then reduce to simmer for 15 minutes or until pasta is cooked. Add cheeses and stir until melted.
** He had to move everything over to the dutch oven to prevent over flow.

Kristin.... I am so glad you enjoyed this dish. I'm a regular poster on the WW boards (jillybean03), and I'm the creator of that recipe. It's a skillet/low fat version of a recipe I submitted to the Southern Living Annual recipe contest. The full title of the recipe is "Jilly's Taco Pasta Skillet". As unappetizing as it can be to look at, the flavors seem to be very popular.
